1Prepare the egg noodles or cook the spaghetti al dente. Drain and set aside
2Over medium high heat, bring the beef broth to a boil
3Add in sliced shallots, garlic and ginger
4Add in ketchup, chili paste, sugar and salt to taste. Bring to a boil
5Simmer until the broth has reduced and thickened slightly
6Add in prawns and simmer until prawns turn pink
7Drizzle in the egg slowly and simmer until sauce thickens
8Dish the noodles and pour the gravy over them
9Garnish with hard-boiled eggs and lime wedges

½ lb. egg noodles or ½ lb. spaghetti, cooked al dente
½ lb. shrimp, peeled and deveined, head off
2 shallots, sliced thinly
1½ teaspoons garlic, minced
½ teaspoon ginger, minced
2 cups beef broth
5 tablespoons ketchup
1 tablespoon chili paste / Sriracha sauce
2 eggs, beaten
3 teaspoons sugar
Salt to taste
1 hard-boiled egg, halved
1 lime, cut into wedges
