Homemade Gravy

1Melt the butter in a medium sauce pan over medium-low heat. Add the onions and cook until very soft and translucent, about 15 minutes.
2Whisk in the flour and cook for 2-3 minutes, stirring occasionally. Whisk in the turkey drippings/chicken broth and Cognac and cook, stirring occasionally, for about 5 minutes until thickened. Stir in the cream and fresh herbs and season to taste with salt and pepper (I usually add about 1/2 teaspoon salt and 1/4 teaspoon pepper, but it depends how salty your broth is.) Transfer gravy to bowl or gravy boat and serve.
3If you make the gravy ahead of time, it may thicken up; you can thin it to the desired consistency with water or chicken broth.

1 stick unsalted butter
1-1/2 cups finely chopped yellow onions (from 2 small onions)
1/4 cup all purpose flour
Defatted turkey drippings plus chicken broth to make 2-1/2 cups
1 tablespoon Cognac or Brandy
1 tablespoon heavy cream
1 tablespoon chopped fresh herbs (such as thyme, sage, rosemary or parsley)
Salt and pepper, to taste
