1Cook the noodles according to the package directions
2Over medium high heat, saute garlic and ginger until fragrant
3Add in mushrooms, carrots and snow peas and cook until tender, about 2 minutes
4Toss in bell pepper and baby spinach and saute for 2-3 minutes until baby spinach cooks down
5Add in noodles, soy sauce, oyster sauce (optional), Sriracha (optional), red pepper flakes (optional) sugar and pepper to taste and stir to mix
6Remove from heat and finish with sesame oil
7Dish and serve hot

1 teaspoon garlic, minced
½ teaspoon ginger, minced
8 oz. cremini mushrooms, sliced
1 carrot, julienned/1 cup matchstick carrots
1 cup snow peas, ends trimmed
1 red bell pepper, cut into strips
4 cups baby spinach
4 tablespoons low sodium soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon Sriracha (optional)
1 tablespoon red pepper flakes (optional)
2 teaspoons sugar
Pepper to taste
1 tablespoon sesame oil
